How many data drops does my office need?

It depends on headcount, equipment and how the space is used. A useful rule is to plan for more than you need today, because adding a drop later costs far more than running one during the initial install.

What is the difference between structured cabling and just running cable?

Structured cabling follows a plan: consistent standards, a central patch point, labelling and testing. Running cable ad hoc works until something breaks, at which point nobody can tell which cable goes where.

Do we need fiber, or is copper enough?

Copper handles most in-building runs. Fiber is for distance, for links between buildings or floors, and for backbone segments carrying a lot of traffic. Tell us the layout and we will say which the site actually needs.
